Lunch: Steak, Onion and Cheese Tortilla Bowls with Lettuce and Tomato

Great weekend lunch to enjoy when you feel like greasy food but want to stay on track. By going light on the cheese, adding some veggies and cooking up a lean meat such as filet mignon, you can create these great steak subs really quick! I recommend frying an onion cut into slices with some olive oil, once they're cooked, take them out and add your steak in the pan (so that it's nice and hot and lightly greased). Once the steak is cooked through, put the mixture into tortillas or tortilla cups (bought these at Walmart in the US) and garnish with lettuce, tomatoes and cheese!

P.S.: A vegetarian alternative would be to make a bean and salsa mixture on the stove and add them to your veggies and cheese.
