GLUTEN-FREE PESTO PIZZA WITH CAULIFLOWER CRUST

This recipe has a lot of steps so I figured the easiest way to follow would be to have access to a printable copy which you can read as you scroll through the pictures, step by step! I hope you like it and that you try it out the next time you're feeling like pizza. I remember pizza and pasta being the hardest thing to 'give up' when I chose a clean eating lifestyle. Therefore, developing a cauliflower crust pizza recipe including my favourite pasta sauce seemed like the perfect way to absolve cravings!

Gluten-Free Pesto Pizza with Cauliflower Crust
Pizza night without the carbs!
Ingredients
  • 2 tbsp olive oil
  • 2 tsp pine nuts
  • 1/2 cup fresh basil leaves
  • salt and pepper
  • 3/4 medium cauliflower
  • 2 tsp parmesan cheese
  • 2 tsp mozzarella cheese
  • 1-2 tsp assorted spices (oregano, red pepper, garlic powder)
  • 1 tbsp flaxseed meal
  • 1 egg
  • 2/3 cup shredded mozzarella cheese
  • 1 medium tomato (sliced)
Instructions
Pesto Sauce1. Put pine nuts and olive oil into a small blender (Magic Bullet).2. Wash and chop your basil leaves and add them in the machine. 3. Blend until your ingredients become a paste, cover and leave it in the fridge until needed. Cauliflower Crust1. Wash and cut your cauliflower (remove the stems).2. Add it to the food processor and blend for about 20-30 seconds. Pulse until it is has a fluffy, grounded texture. 3. Transfer cauliflower into a microwave-safe container and heat on high for 4 minutes. 4. During that time, set up your cutting board with a large sheet of parchment paper and apply on olive oil spray to the center. 5. Once heated, transfer cauliflower in the middle of a clean dishtowel and let it sit for 5 minutes to cool. Then wrap the towel up and twist out all the water you can get. (Without this step, your crust will be too crumbly!) 6. Put your cauliflower in a bowl with the Parmesan cheese, mozzarella, assorted spices and flaxseed meal. Add the egg and mix with hands. 7. Set cauliflower dough onto the parchment paper and form a flat, even crust. 8. Bake for about 8 minutes and once golden remove the crust from the oven. Spread a thin layer of pesto sauce then add your tomato slices and the mozzarella cheese. Bake again for about 6 minutes or until your cheese is fully melted. 9. Let cool for 3-4 minutes. Then, slice and enjoy!Note: Tomatoes can be substituted or accompanied by any topping you would like to have on your pizza. Pesto also tastes great with grilled chicken, spinach and peppers. Get creative!
